Potato-Walnut Cake

Ingredients:

2 cups granulated sugar

1/4 cup butter, softened

4 eggs, separated

1 cup hot mashed potatoes

2 squares baking chocolate, melted

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1 teaspoon each: cloves, nutmeg, & cinnamon

1/2 cup milk

1 cup raisins, lightly floured

1 cup walnuts, lightly floured

Directions:

Preheat oven to 350 degrees. Cream butter, then add sugar and egg yolks. Add hot potatoes and melted chocolate. Sift flour, baking powder and spices together; add alternately with milk. Mix well by hand. Add nuts and raisins and fold in between egg whites. Pour into greased and floured tube cake pan. Bake at 350 degrees for 1 hour.

Use your favorite icing or serve plain. Keep cake sealed; it improves with age.
