Pineapple Brunch Crunch |
Ingredients: 1 can (20 ounces) crushed pineapple 3 eggs, slightly beaten 1/2 cup granulated sugar 2 tablespoons all-purpose flour 1/2 teaspoon salt 1 cup granola (without raisins) 1/2 cup shredded coconut 1 tablespoon butter, melted 1 tablespoon packed brown sugar Directions: Preheat oven to 350 degrees. Butter an 8" x 8" baking dish. In a mixing bowl, combine pineapple (with liquid), eggs, sugar, flour and salt; mix well. Pour into baking dish. Bake at 350 degrees for 20 minutes. Mix granola, coconut, butter and brown sugar; sprinkle over top. Bake until brown, about 15 minutes longer. |
