Pineapple-Cheese Muffins |
Ingredients: 1 can (8.25 ounces) crushed pineapple 2 cups baking mix 1 tablespoon granulated sugar 1/2 cup milk 1 egg, at room temperature 1/2 cup shredded cheddar cheese Directions: Preheat oven to 400 degrees. Line 12 medium muffin cups with paper baking cups. Mix pineapple (with syrup) and the remaining ingredients; blending all ingredients into they are moist, about 30 seconds. Fill muffin cups about 2/3 full. Bake at 400 degrees for about 15 minutes or until light golden brown and wooden pick inserted in center comes out clean. |
