Pickled Beets

Ingredients:

2 cups apple vinegar

1 cup water

2 cups sugar

1 rounded teaspoon salt

fresh beets, enough to make 4 quarts sliced

Directions:

In a large pot, cover beets with water and cook until tender. Peel and cut the beets in whatever shape you like (slices, chunks, etc.)

In a medium saucepan, heat the vinegar, water, sugar and salt until sugar and salt are dissolved.

Pour hot liquid over the beets and bring to a boil. Fill hot jars and adjust the lids. Process in a hot-water-bath canner for 30 minutes.
