Pepperoni/Cheese Rolls

Ingredients:

4 packages (8 count each) frozen dinner rolls

2 packages (36 count each) pepperoni slices

1 pound pepper jack cheese, cut into 1" squares

1 pound colby jack cheese, cut into 1" squares

Directions:

Remove dinner rolls from refrigerator and bring to room temperature. Remove rolls from package and place on waxed paper to allow them to rise for about 3 hours.

Preheat oven to 350 degrees. Push each roll flat and lay 2 pepperonis, one pepper jack cube, and one colby cube on each roll.  Fold the roll toward the center to close up the edges. Place them on a cookie sheet, placing the seam side down.  Note: it will probably leak some cheese while it is baking.

Bake at 350 degrees for 11-12 minutes.

Serve with pasta or marinara sauce.

Note: Once baked, these rolls do not require refrigeration, which make them wonderful for family trips.
