Pecan Crusted Catfish

Ingredients:

1/2 cup corn flakes, crushed into fine crumbs

1/4 cup pecans, ground very finely

1/4 teaspoon paprika

1/8 teaspoon garlic powder

1/8 teaspoon ground cayenne pepper

1 pound catfish, cut into 4 pieces

1 egg white, slightly beaten

Directions:

Preheat oven to 450 degrees. Spray 15" x 10" pan with non-stick spray. In a large resealable plastic bag, mix crumbs, pecans, paprika, garlic powder, and red pepper. Dip fish in egg white and then shake fish in the crumb mixture. Place fish in pan. Bake at 450 degrees for 15-20 minutes or till fish flakes.
