Pecan-Raisin Bars

Ingredients:

1 cup granulated sugar

2/3 cup butter, softened

1 teaspoon vanilla extract

1 egg, at room temperature

2 cups all-purpose flour

3 eggs, at room temperature

2/3 cup granulated sugar

1/2 cup light corn syrup

1/4 cup molasses

1 teaspoon vanilla extract

1 cup pecans, chopped

1 cup raisins

Directions:

Preheat oven to 350 degrees. In a large bowl, mix 1 cup sugar, butter, 1 teaspoon vanilla, and 1 egg. Stir in flour and mix well. Press dough in ungreased 13" x 9" baking dish or pan. Bake at 350 degrees for about 15 minutes or until edges are light brown.

In a medium bowl, beat 3 eggs, 2/3 cup sugar, corn syrup, molasses and 1 teaspoon vanilla. Stir in pecans and raisins and mix well; pour over crust. Bake at 350 degrees for 25-30 minutes or until set. Cool completely; loosen edges from sides of pan. Cut into bars, about 2" square.
