Pear Cake

Ingredients:

 2 cups granulated sugar

2 cups all-purpose flour

1 teaspoon baking soda

1/8 teaspoon salt

3 eggs, at room temperature

1 cup cooking oil

2 teaspoons pumpkin pie spice

1 cup fresh pears, peeled and chopped

1 cup pecans, chopped

Directions:

Preheat oven to 400 degrees. In a medium mixing bowl, combine the sugar, flour, soda, and salt. Add the eggs, one at a time, and mix on medium speed. Continue beating, as you add the cooking oil, spice, pears and pecans.

Place in a greased 9" x 13" baking pan. Bake at 400 degrees for 30 minutes. Cool on wire rack for ten minutes. Slice and serve warm.

This cake is great plain, with ice cream, or with a sweet glaze (found in our recipes).
