Pear & Spinach Salad

Ingredients:

3/4 cup olive oil

1/4 cup seasoned rice vinegar

1 garlic clove, crushed

1/4 teaspoon salt

1-2 teaspoons Dijon mustard, according to taste

1 package fresh spinach, washed and drained

2-3 large, ripe pears, cored, quartered & sliced

1 avocado, peeled and diced

3-4 strips bacon, cooked crisp and crumbled

1/2 cup pine nuts, toasted

1/2 cup dried cranberries

1/4 cup fresh mushrooms

Directions:

Prepare dressing by mixing olive oil, vinegar, garlic, salt and mustard together and whisking well. In a large salad bowl, combine spinach, pears, avocado, bacon, pine nuts, cranberries and mushrooms together. Drizzle dressing over salad. Toss before serving.
