Peanut Butter Snowballs

Ingredients:

1 cup butter, softened

2/3 cup granulated sugar

2/3 cup chunky peanut butter

2 1/2 cups all-purpose flour

1/4 tsp. salt

3/4 cup confectioner's sugar

white edible glitter

Directions:

In a medium bowl, beat butter and sugar at medium speed with an electric mixer until creamy. Stir in peanut butter and blend well. Slowly add flour and salt, beating until well blended.

Preheat oven to 350 degrees. Roll dough into 60 1-inch balls; place 1 inch apart on parchment paper-lined baking sheets. Bake at 350 degrees for 12-15 minutes. Cool on baking sheets on wire racks for 5 minutes. Roll warm cookies in confectioner's sugar. Dust with edible glitter.  Yields: 5 dozen
