Peanut Butter Meringue Pie

Ingredients:

1 unbaked pie shell (9")

1 cup confectioners sugar

1 1/2 cups peanut butter

1/2 cup granulated sugar

1/4 cup cornstarch

2 cups milk

3 egg yolks

2 tablespoons butter

1 teaspoon vanilla extract

meringue (see recipe under Pie Meringue)

Directions:

Preheat oven to 350 degrees. In medium bowl, blend confectioners sugar and peanut butter and spread into pie shell.

In a medium saucepan, combine sugar, cornstarch and milk. Mix until smooth over medium heat. Bring to a boil for two minutes, stirring constantly.

Place egg yolks in a small bowl and add 1/2 cup of the hot mixture to the yolks, stirring constantly.  Put this egg mixture back into the saucepan, continuing to stir constantly. Cook until thick. Add butter and vanilla. Mix and pour into the pie shell, reserving 2 tablespoons for topping.

Make your meringue and spread over the pie. Drizzle the reserved peanut butter mixture over the meringue. Bake at 350 degrees for 10-12 minutes or until lightly browned.
