Peanut Butter Cookies

Ingredients:

1 cup butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 eggs, at room temperature

1 egg yolk

2 teaspoons vanilla extract

1 jar (18 ounces) crunchy peanut butter

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped peanuts

Directions:

Preheat oven to 350 degrees.  In a large mixing bowl, using electric mixer on medium speed, cream butter and both sugars until smooth. Add the eggs, extra yolk, and vanilla; mix until fluffy. Stir in peanut butter.

In a medium bowl, sift together the flour, baking soda, and salt; stir into the peanut butter mixture. Finally, stir in the peanuts. Refrigerate the dough for at least two hours.

Roll dough into walnut-sized balls. Place on a lightly greased cookie sheet and flatten slightly with a fork. Bake at 350 degrees for 12-15 minutes. Cookies should look dry on the top. Allow to cool for three minutes on the cookie sheet before removing to a wire rack to cool completely. Note: These cookies taste great when slightly undercooked.
