Peanut Butter & Jam Bars

Ingredients:

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup shortening

1/2 cup peanut butter

1 egg, at room temperature

1 1/4 cups all-purpose flour

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1/2 cup red raspberry jam

2 tablespoons butter

1 cup confectioners' sugar

1 teaspoon vanilla extract

1-2 tablespoons hot water

Directions:

Preheat oven to 350 degrees. In a medium bowl, mix sugars, peanut butter and egg. Stir in flour, soda and baking powder. Reserve 1 cup dough. Press remaining dough in ungreased 13" x 9" baking dish; spread with jam. Crumble reserved dough and sprinkle over jam. Bake at 350 degrees for 20 minutes or until golden brown. Cool.

Prepare glaze by heating butter in 1-quart saucepan over low heat until melted. Mix in confectioners' sugar and vanilla. Beat in hot water, 1 teaspoon at a time, until smooth and of desire consistency. Drizzle bars with glaze. Cut into bars, about 2" x 1 1/2". Yields 3 dozen bars.
