Peachy Cream

Ingredients:

1 tablespoon unflavored gelatin

1 package (16 ounces) frozen peaches, drained, with juice reserved

3/4 cup liquid (add water to peach juice if needed)

2 tablespoons lemon juice

1/4 cup granulated sugar

1/8 teaspoon almond extract

2 cups whipped topping

Directions:

Soften gelatin in liquid; heat until dissolved. Mix in lemon juice, extract, sugar and peaches. Chill until thick, but not set. Fold whipped topping into gelatin mixture. Pour into a 1-quart mold or six individual molds. Chill until set.
