Peach Stir-Fry Sauce

Ingredients:

1 can (15 ounces) peaches in heavy syrup, well-drained & pureed, reserve juice

1/3 cup soy sauce

1/4 cup unseasoned rice vinegar

1/2 cup reserved peach syrup

1/3 cup light brown sugar

3 teaspoons minced fresh garlic

3/4 teaspoon ground ginger

1/8 teaspoon dry red chili flakes

Directions:

In a medium saucepan, combine the soy sauce, vinegar, peach syrup, brown sugar, garlic, ginger and chili flakes. Bring mixture to a boil over high heat and then reduce heat to a simmer for about 5 minutes (to cook the ginger and garlic). Remove from heat and stir into the pureed peaches. Cover and refrigerate.

This sauce is great over chicken or pork chops, served with rice.
