Peach-Filled French Toast

Ingredients:

3 fresh peaches

1 package (3 oz.) cream cheese, softened

2 tablespoons chopped pecans, toasted

1 tablespoon honey

12 bread slices

2 large eggs

1/2 cup milk

1/4 teaspoon vanilla extract

3 tablespoons butter, divided

confectioners sugar

Directions:

Peel peaches. Chop 1 peach and slice the remaining 2 peaches.

Stir cream cheese with a fork until fluffy; stir in chopped peach, pecans, and honey. Spoon about 1 1/2 tablespoons filling onto each of 6 bread slices. Top with remaining bread slices.

Whisk together eggs, milk, and vanilla. Dip each sandwich into egg mixture, turning to coat other side.

Melt 1 tablespoon butter over medium-high heat in a large skillet. Cook sandwiches, 2 at a time, for 3 to 4 minutes on each side or until browned. Repeat procedure with remaining butter and sandwiches.

Sprinkle with confectioners sugar; serve with peach slices.
