Orange Slice Cake

Ingredients:

1 cup butter

2 cups granulated sugar

4 eggs, at room temperature

1 teaspoon soda

1/2 cup buttermilk

3 1/2 cups all-purpose flour

1 pound dates, chopped

1 pound candy orange slices, chopped

2 cups pecans

1 cup flaked coconut

1 cup orange juice

2 cups confectioners' sugar

Directions:

Preheat oven to 250 degrees. Cream butter and sugar until smooth. Add eggs, one at a time. Dissolve soda in buttermilk and add to creamed mixture. Place flour in a large bowl. Add dates, orange slices and pecans. Stir to coat each piece. Add flour mixture and coconut to creamed mixture. Makes very stiff dough and should be mixed by hand. Put in greased and floured pan and bake at 250 degrees for 2 1/2 to 3 hours.

In a bowl, mix orange juice and confectioners' sugar to create a glaze. Pour over the cake.

To store in refrigerator, place a piece of waxed paper over cake, then wrap in heavy duty foil. Cake will keep in refrigerator for up to three weeks.
