Old Fashioned Vanilla Ice Cream

Ingredients (to make 5 quarts):

2 3/4 cups granulated sugar

2 1/2 tablespoons cornstarch

1/4 teaspoon salt

7 1/2 cups milk

5 egg yolks

12 ounces evaporated milk

2 1/2 cups whipping cream

2 1/2 tablespoons vanilla extract

Directions:

In a medium saucepan, combine sugar, cornstarch and salt and heat on medium heat. Stir in milk. Simmer for 1 minute over low heat; set aside.

In a small bowl, lightly beat egg yolks. Stir in about 1 cup of the milk mixture into egg yolks. Stirring constantly, pour egg mixture into remaining milk mixture. Cook and stir over low heat for 2 minutes or until slightly thickened.

Add evaporated milk, whipping cream and vanilla. Mix well. Cool to room temperature. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions.
