Oatmeal Raisin Cookies |
Ingredients: 1 cup (2 sticks) butter, softened 1 cup firmly packed brown sugar 1/2 cup granulated sugar 2 eggs 2 teaspoons vanilla extract 1 teaspoon lemon juice 3 cups quick-cooking oats 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 2 cups raisins 1 1/2 cups chopped pecans Directions: Preheat oven to 350 degrees. Using an electric mixer, beat together butter and sugars until creamy. Add eggs, vanilla and lemon juice; beat well. In a large bowl, combine oats, flour, soda, salt and cinnamon; mix well. Stir the flour mixture into egg mixture, blending well. Add the raisins and nuts to the dough and mix well. Drop by rounded tablespoons onto ungreased cookie sheet, placing 2" apart. Bake at 350 degrees for 12 minutes or until cookies are lightly browned. Cool 1 minute on cookie sheet; transfer to a wire rack to cool completely. Store in a sealed container to keep them soft and chewy. Yields: 4 dozen cookies.
