Oatmeal-Chocolate-Pecan Cookies |
(This recipe may be halved. The recipe makes a huge mixing bowl of cookie dough). Ingredients: 1 cup butter 1 cup shortening 2 cups granulated sugar 2 cups brown sugar 4 eggs, at room temperature 2 teaspoons vanilla 4 cups all-purpose flour 5 cups quick-cook oats 1 teaspoon salt 2 teaspoons baking powder 2 teaspoons baking soda 1 package (24 ounces) chocolate chips 1 Hershey bar (8 ounces), grated 3 cups pecans, chopped (walnuts may be substituted, if desired) Directions: Preheat oven to 375 degrees. In your largest mixing bowl, cream butter, shortening, and both sugars. Slowly add the following ingredients one by one and continue blending: eggs, vanilla, flour, oats, salt, baking powder, soda, chocolate chips, grated Hershey bar, pecans. Roll into balls and place 2" apart on a cookie sheet. If you're using the full recipe, it will fill about 3 cookies sheets. Bake at 375 degrees for 10 minutes. These can easily be frozen and served later. Yields: 112 cookies |
