Morning Glory Muffins

Ingredients:

2 1/2 cups granulated sugar

6 eggs, at room temperature

2 cups cooking oil

4 cups grated carrots

1 cup shredded coconut

1 cup raisins

1 cup pecans, chopped

1 cup grated apples

4 teaspoons baking soda

1 teaspoon salt

4 teaspoons crushed cinnamon

4 cups all-purpose flour

Directions:

Preheat oven to 375 degrees.

In a large mixing bowl, combine all ingredients and stir together well. Fill muffin cup 2/3 full. Bake at 375 degrees for 20 minutes.

Note: This recipe makes a large bowl of batter. If you don't need all of the muffins at one time, the batter will keep in the refrigerator for up to 4 weeks.
