Mini Pecan Pies |
Ingredients for Crust: 1 1/2 sticks butter 3 ounces cream cheese 1 1/2 cups all-purpose flour Ingredients for Filling: 2 eggs, at room temperature 1 1/2 cups brown sugar 2 tablespoons butter, melted 1/2 teaspoon vanilla extract 1/4 teaspoon salt 1 cup chopped pecans Directions for Crust: In a medium bowl, mix all ingredients. Make small balls and press into mini muffin pans as a pie crust Directions for Filling: Preheat oven to 325 degrees. In a medium bowl, mix all ingredients together and then pour 3/4 teaspoon into shells. Bake at 325 degrees for 30 minutes. Yields 18-24, depending on depth & size of muffin pan. |
