Mini Cheesecakes

Ingredients:

18 vanilla wafers

3 packages (8 ounces each) cream cheese, softened

3/4 cup granulated sugar

1 tablespoon lemon juice

1 1/4 teaspoons grated lemon peel

3/4 teaspoon vanilla extract

3 eggs, at room temperature

strawberry preserves, for topping

Directions:

Preheat oven to 325 degrees. Place wafers, flat side down, on bottom of each of 18 paper-lined muffin cups. In a mixing bowl, combine cream cheese, sugar, juice, peel and vanilla. Mix at medium speed until well blended. Add eggs, one at a time, mixing well after each addition. Pour into baking cups, filling each cup almost full. Bake at 325 degrees for 25 minutes. Cool before removing from pan. Chill. Top each with 1/2 teaspoon preserves.
