Mexican Chicken Lasagna |
Ingredients: 3 1/2 cups salsa 1 package taco seasoning 1 package (8 ounces) lasagna noodles 1 pound raw chicken, cut into bite size 2 cans (8 ounces each) cooked black beans 1 1/2 cups shredded Mexican cheese 4 ounces green chilies 1 cup cottage cheese 2 eggs Directions: In small bowl, mix salsa and taco seasoning mix. Pour 1 cup of it into bottom of 9x13 casserole dish. Put one layer of raw lasagna noodles, followed with the chicken in a layer, and then 1 cup of salsa mixture. Put a second layer of noodles, followed by a layer of beans, shredded cheese, & chilies. In a small bowl, combine cottage cheese and eggs; put that on top of the beans & cheese. Put the third layer of noodles and the rest of the salsa mixture. Cover with foil and bake at 350 degrees for 50 minutes. Top with cheese and bake 10 minutes more, uncovered. Note: this can be prepared in advance and frozen. |
