Meat Loaf Pie

Ingredients:

2 eggs, at room temperature

1 cup milk

1 3/4 cups soft bread crumbs

1/4 cup chopped onion

1 teaspoon salt

1/2 teaspoon rubbed sage

1/4 teaspoon crushed black pepper

1 1/2 pounds ground beef

1 envelope butter & herb instant mashed potatoes or 4 1/2 cups hot mashed potatoes

1 teaspoon prepared mustard

1/2 cup shredded cheddar cheese

Directions:

Preheat oven to 350 degrees. In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Press into an ungreased deep dish 9" pie plate. Bake at 350 degrees for 35-40 minutes or until meet is no longer pink.

Meanwhile, prepare mashed potatoes according to package directions (or prepare fresh mashed potatoes); stir in mustard. Drain meat loaf; spread potatoes over top. Sprinkle with cheese. Bake 3-5 minutes longer or until cheese is melted. Let stand for 5 minutes before cutting.
