Mango Lime Cupcakes

Ingredients:

1 stick butter, at room temperature

1 cup granulated sugar

1 egg, at room temperature

1 egg yolk

1 cup milk

1 1/3 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking powder

1/4 teaspoon salt

1 ripe mango, peeled and chopped

1 tablespoon lime juice

zest of one lime

Directions:

Preheat oven to 350 degrees. In a medium bowl, beat the butter for about 2 minutes until well creamed. Add the sugar and beat until light and fluffy, about 3 minutes, scraping down the sides of the bowl halfway through. Add the egg and extra egg yolk and beat for 45 seconds. Add the flour, salt, and baking powder and mix well. Add the milk, lime juice and lime zest. Add some of the flour mixture, then some of the milk, alternating between dry-wet-dry and ending with the dry ingredients. Mix together until just combined.

Fold the mango into the batter. Scoop into cupcake papers until almost full. Bake at 350 degrees for 15-18 minutes. Cupcakes will be dense, heavy, and moist. A toothpick should still come out clean. Let cool on a wire rack.

Ingredients for Neufchatel Cheese Frosting:

1/4 cup (1/2 stick) butter, at room temperature

4 ounces of Neufchatel cheese, at room temperature

2 cups confectioners' sugar

1 teaspoon vanilla extract

zest from one lime

chili powder, for garnish (I really like extra chili powder; season to your own taste)

Directions:

In a medium bowl, cream the butter and cream cheese together, about 3 minutes. Slowly add the sugar and then the vanilla. Spread on cooled cupcakes. Sprinkle with lime zest and chili powder.
