Mandarin Muffins |
Ingredients: 1 1/2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon allspice 1/2 teaspoon salt 1/2 cup granulated sugar 1 large egg, beaten 1 cup milk 4 tablespoons butter, melted 1 can (10 ozs.) mandarin orange segments, drained Directions: Preheat oven to 400 degrees. In a large mixing bowl, sift together flour, baking powder, allspice and salt. Add sugar. In another bowl, whisk egg, milk and melted butter. Add this mixture to the dry ingredients, stirring until just combined. Add mandarins and stir in. Do not overmix; the batter should still be lumpy. Spoon mixture into greased muffin tins, filling each to 2/3 full. Bake at 400 degrees for 15-20 minutes, or until golden brown. Cool for a few minutes on a rack, then serve them warm with butter. |
