Layered Onion Bake

Ingredients:

2 cups baking/biscuit mix

1/2 cup cold water

1 can (3 ounces) French fried onions, partly crushed

1 1/2 cups (about 6 ounces) shredded Monterey Jack cheese

4 eggs, at room temperature

1 can (10 3/4 ounces) condensed cream of onion soup

1/2 teaspoon salt

1/4 teaspoon crushed black pepper

Directions:

Preheat oven to 375 degrees. Grease 13" x 9" baking dish. Mix baking mix and water until soft dough forms; beat vigorously 20 strokes. Pat dough in pan with floured hands, pressing dough 1/2" up sides. Sprinkle 1 cup crushed onions and 1 cup cheese over dough. In a medium bowl, mix eggs, soup, salt and pepper; pour over cheese and onions. Sprinkle with remaining cheese.

Bake at 375 degrees for 25-30 minutes or until crust is golden brown. Crush remaining onions; sprinkle over top. Bake until onions are golden brown and filling is set, about 5 minutes longer.
