Key Lime Pie

Ingredients:

baked 9" pie shell

1/3 cup cornstarch

1 1/2 cup granulated sugar

1/4 teaspoon salt

1 1/2 cup water

3 egg yolks, beaten

1/4 cup fresh lime juice

1 tablespoon grated lime peel

4 drops green food color (more or less depending on your choice of color)

meringue (if desired)

Directions:

Preheat oven to 350 degrees. In a saucepan, combine cornstarch, sugar and salt; gradually add water, stirring until smooth. Bring to a boil over medium heat, stirring, and boil for 1 minute. Remove from heat and quickly add one half the hot mixture to the egg yolks in a bowl, mixing well. Return to the hot mixture, blending thoroughly. Bring to a boil over medium heat, stirring, and boil for 1 minute. Remove from heat; stir in lime juice and peel and food color to make filling a delicate green.

Pour into cool pie shell at once. Serve plain or add meringue on top. If so, completely cover with meringue. Bake at 350 degrees for 12-15 minutes, or until meringue is golden. Cool on rack away from drafts, at least 1 hour before cutting.
