Irish Spud Strips

Ingredients:

3 tablespoons grated Parmesan cheese

4 1/2 teaspoons Cajun seasoning

2 1/2 cups cooking oil

3 medium potatoes, peeled and sliced lengthwise into 1/4" strips

additional Parmesan cheese

Directions:

In a large resealable plastic bag, combine the Parmesan cheese and Cajun seasoning. In an electric skillet, heat oil to 375 degrees. Pat potatoes dry with paper towels; place a third of the strips in bag and shake to coat. Cook in hot oil for 3-4 minutes or until golden brown, turning occasionally. Drain on paper towels. Repeat with remaining potato strips. Serve warm. Sprinkle with additional Parmesan cheese just before serving.
