Hot Slaw with Apple

Ingredients:

1/2 pound finely diced salt pork

3 tablespoons vinegar

2 tablespoons water

1 tablespoon granulated sugar

1 teaspoon celery seed

1 teaspoon salt

3 cups shredded cabbage

1 large apple, pared & grated

Directions:

In a medium skillet, render the pork slowly. Remove the crisp browned pieces, drain on absorbent paper and reserve.

Leaving the grease in the skillet, add the vinegar, water, sugar, celery seed and salt.  Cook and stir these ingredients over high heat until they boil. Reduce heat to a simmer. Stir in the cabbage and apple.

Simmer the slaw about one minute longer. Serve garnished with the tiny browned cubes of salt pork.
