Hot Pepper Jelly

Ingredients:

2 medium red peppers, seeded, finely chopped (about 1 1/2 cups)

2 medium green peppers, seeded, finely chopped (about 1 1/2 cups)

10 large jalapeno peppers, only half of them seeded, finely chopped (about 1 cup)

1 cup cider vinegar

1 box Sure Jell Fruit Pectin

1/2 teaspoon butter

5 cups sugar, measured into separate bowls

Directions:

Your jars should consist of the glass jar, flat lid, and screw band. These all need to be prepared properly for making jelly. Bring a large pot of water to boiling and have ready. First wash the jars and screw bands in hot soapy water; rinsing them with warm water. Put the lids in a saucepan and cover with part of the boiling water. Pour the remainder of the boiling water in a large canner and add more hot water if needed to cover the jars. Let them stand in the hot water until ready to use. Drain well before filling them with the jelly.

Place the pepper in a 6-8 quart saucepot. Add vinegar. Stir in pectin. Add butter to reduce foaming. Bring the mixture to a full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil for exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.

Immediately ladle into the prepared jars, filling to within 1/8" of tops. Wipe the jar rims and threads clean. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. The water must cover the jars by 1-2 inches. Add boiling water, if necessary. Cover; bring water to a gentle boil. Process for 10 minutes. Remove the jars and place them upright on a towel to cool completely. After jars cool, check the seals by pressing the middle of the lid with your finger. If the lid springs back, the lid is not sealed and refrigeration is necessary. If they are properly sealed, they're preserved for months on a shelf.

This jelly is great in many different ways:  on a hot biscuit with sausage or served with cream cheese and crackers.
