Hot Dog Relish

Ingredients:

4 cups ground onion

4 cups cabbage

4 cups green tomatoes

6 red bell peppers

6 green bell peppers

1/2 cup salt

6 cups granulated sugar

1 tablespoon celery seed

2 tablespoons mustard seed

1 1/2 teaspoons turmeric

4 cups vinegar

2 cups cold water

Directions:

Grind coarsely the vegetables, add salt, and let stand overnight. Rinse in cold water and drain. Combine vegetables with sugar, spices, vinegar and water. Let come to full boil and cook for 8 minutes. Put into hot jars and adjust lids. Process in boiling-water-bath canner for 10 minutes. Yields about 8 pints.
