Horseradish Pimento Cheese

Ingredients:

2 cups shredded extra-sharp cheddar cheese, at room temperature

2/3 cup shredded Monerey Jack cheese, at room temperature

6 tablespoons mayonnaise

4 tablespoons cream cheese, softened

4 ounces jarred diced pimento peppers, drained

2 tablespoons bread & butter pickle juice

1 tablespoon creamy horseradish sauce

2 teaspoons yellow mustard

Directions:

In a medium bowl, combine all ingredients.  Mix well until well combined. 

Yields: 8 servings

Keep refrigerated until ready to serve.  Makes a great sandwich, topping for great hamburgers, or can be served with crackers or celery as an appetizer.
