Green Tomato Pie

Ingredients:

6 medium green tomatoes

2 tablespoons water

1 lemon, sliced thin

2 tablespoons cornstarch

1 cup granulated sugar

1/8 teaspoon salt

1/4 teaspoon cinnamon

2 tablespoons butter

2 pie crusts

Directions:

Preheat oven to 375 degrees. Bake first pie crust until lightly brown. Wash, stem and slice tomatoes. In a medium saucepan, cook tomatoes with lemon slices in water until tomatoes are almost tender. Remove tomatoes from pan, but keep the liquid in the pan. When liquid is cooled, add cornstarch, sugar and salt. Cook until thickened. Add tomatoes, cinnamon, and butter. Mix thoroughly. Pour hot mixture into baked pastry shell. Top with unbaked layer of pastry and bake at 375 degrees until golden brown.
