Grasshopper Torte

Ingredients:

2 cups chocolate wafer crumbs (something like Keebler Thin Bits)

1/4 cup margarine, melted

1 jar (7 ounces) marshmallow cream

1/4 cup milk

1/8 teaspoon peppermint extract

6 drops green food coloring

2 cups whipping cream, whipped

Directions:

In a medium bowl, combine crumbs and margarine; reserve 1/2 cup for topping. Press remaining crumb mixture onto bottom of 9" springform pan. Combine marshmallow cream, milk, peppermint extract, and food coloring, mixing with electric mixer or wire whisk until well blended. Fold in whipped cream. Pour over crust; sprinkle with reserved crumbs. Freeze. Remove sides and bottom of springform pan and place torte on serving tray. Yields 10-12 servings.
