Fruit* Ice Cream |
Note: You can create your own favorite fruit ice cream: strawberry, banana, peach, pineapple, etc. Ingredients: 4 eggs, at room temperature 2 1/2 cups granulated sugar, divided 1/2 teaspoon salt 2 teaspoons vanilla extract 2 cups half-and-half 4 cups crushed fruit 2 cups whipping cream Directions: In a large mixing bowl, beat eggs until lemon colored. Gradually beat in 1 cup of sugar. Add salt and vanilla and beat until thick and creamy. Add half-and-half and mix well. Mix in fruit and remaining 1 1/2 cups sugar. Add whipping cream. Beat well and then pour into ice cream canister. Add more milk, if needed, to bring the mixture to the fill line on the canister. Freeze in ice cream maker according to manufacturer's directions, adding plenty of salt to the ice in the ice cream maker. |
