Fried Potato Cakes

Ingredients:

2 cups leftover mashed potatoes

1 egg, beaten

1/4 cup flour

1 teaspoon crushed black pepper

Directions:

In a small bowl, stir beaten egg, flour and pepper into potatoes. Scoop tablespoonful onto a plate and flatten it into a patty. Dip both sides into additional flour and place into hot oil in skillet. Brown on both sides.

Note: this can be served at dinner with meat and vegetables, but it also goes great with eggs, biscuit & gravy at breakfast.
