Fresh Fruit Medley

Ingredients:

1 fresh pineapple

2 bananas, sliced

1 can (11 ounces) mandarin orange segments, drained

1/2 cup blueberries

1/2 cup mayonnaise or salad dressing

1/2 cup heavy cream, whipped

toasted coconut, for garnish

Directions:

Cut pineapple in half lengthwise through the crown. Remove fruit, leaving shells intact. Core and chunk the pineapple.

In a bowl, combine pineapple chunks, bananas, orange segments, blueberries. Toss lightly and then spoon into the pineapple shells.

Combine salad dressing and whipped cream; mix well. Spoon over fruit mixture. Garnish with coconut. Yields 2 servings.
