Fresh Cranberry & Raisin Pie |
Ingredients: 3 cups fresh cranberries 1 cup seedless raisins 2 eggs, beaten 2/3 cup boiling water 3 tablespoons all-purpose flour 2 cups granulated sugar 1/4 teaspoon salt 2 tablespoons butter, melted 2 teaspoons grated lemon peel unbaked pie crust Directions: Preheat oven to 375 degrees. In a large mixing bowl, combine the cranberries, raisins, and eggs with the boiling water. Slowly add flour, sugar and salt, mixing well. Add butter and lemon peel. Stir and then pour mixture into unbaked pie crust. Decorate top with pastry. Bake at 375 degrees for 45-50 minutes or until toothpick inserted in center tests clean. |
