Fresh Apricot Deep-Dish Pie

Ingredients:

1 Old-Fashioned Pie Crust

3 1/2 cups peeled apricot halves

1/4 cup water

1 1/2 cups granulated sugar

1/2 tablespoon nutmeg

1/4 teaspoon salt

2 tablespoons butter

1/4 cup slivered almonds, toasted

1 egg, at room temperature

1 tablespoon water

Directions:

Preheat oven to 400 degrees. Prepare the Old-Fashioned Pie Crust.

In a medium saucepan, combine apricots and water. Bring to a boil. Stir in sugar, nutmeg and salt. Spoon into a buttered 1 1/2 quart round deep-dish baking dish. Dot with the butter. Sprinkle with the almonds. Remove pie crust ball from the refrigerator and place on a lightly floured surface. Flatten ball to thickness of 1/2". Roll into an 11" circle. Roll the pastry carefully around a rolling pin and unroll over the pie filling. Fold edge under and flute. Cut vents in the tip. Brush with a mixture of egg and 1 tablespoon water. Bake at 400 degrees for 15 minutes. Reduce the oven temperature to 350 degrees. Bake for 30 minutes or until golden brown.
