Fluffy Cheesecake

Step #1:

2 packages of graham crackers

4 tablespoons granulated sugar

3/4 stick margarine (melted)

Crush the crackers and mix together with sugar and margarine. Place in 9" x 13" baking pan. Pack ingredients down with your hand. Bake at 350 degrees for 10 minutes. Let cool before continuing with final steps.

Step #2:

1 small package (3 ounces) lemon gelatin

1 cup boiling water

juice of 1 lemon (3 tablespoons)

Mix these together in a bowl and set aside to cool.

Step #3:

1 package (8 ounces) cream cheese

1 cup granulated sugar

1 teaspoon vanilla extract

Cream these ingredients together in a bowl.

Step #4:

Whip 1 can Milnot, after it has been refrigerated for a few hours, until it makes nice peaks.

Final Preparation:

Reduce speed of mixer and slowly add the cream cheese mixture and the jello mixture. Mix well.

Place on top of the cooled graham cracker crust. Refrigerate for 3-4 hours before serving.
