Flaky Country Peach Turnovers

Ingredients:

1 package frozen puff pastry sheets (such as Pepperidge Farm)

3 cans (15 ounces each) peach slices, drained

8 teaspoons crushed pecans, divided

1 egg yolk

1 teaspoon water

1/2 cup sugar

Directions:

Remove pastry sheets from freezer and thaw for 30 minutes or according to directions on the box. After 25 minutes, preheat oven to 375 degrees.

Place each thawed pastry sheet on a lightly floured surface and roll out to extend each side by approximately 1". Cut each sheet into 8 rectangles to make 16 total.

Fill the bottom portion of each rectangle with 3-5 peach slices and 1/2 teaspoon pecans. Moisten sides with a bit of water and pinch closed to form a square. Place pockets on baking sheet and brush tops with a mixture of egg yolk and 1 teaspoon water; sprinkle top generously with sugar. Cut 3 slits in the top of each pocket for steam to escape while baking.

Bake at 375 degrees for 25 minutes or until pockets are golden brown.
