Firecracker Coconut Dip

Ingredients:

Note: You can vary the heat of this dip with the amount of horseradish you use. Some like it hotter than others.

1 package (8 oz.) cream cheese, softened

1 carton (8 oz.) sour cream

1/2 cup unsweetened coconut milk or cream of coconut (you can find it in the Asian food section)

2 tablespoons prepared horseradish

1 tablespoon grated fresh ginger

1 teaspoon finely shredded lime peel

3 tablespoons lime juice

Directions:

In a medium mixing bowl, beat cream cheese with an electric mixer on medium speed for 30 seconds. Beat in sour cream, coconut milk, horseradish, fresh ginger, lime peel, and lime juice until smooth.

Serve dip with raw vegetables, such as sliced carrots, celery strips, or sweet pepper strips or serve with sesame sticks, chips, or chicken strips.
