Fiesta Rice

Ingredients:

1 can (10.75 ounces) condensed chicken broth

1/2 cup water

1/2 cup thick & chunky salsa

2 cups uncooked instant rice

Directions:

In a saucepan, mix broth, water and salsa together and bring to a boil. Stir in rice, cover, and remove from heat. Let stand for 5 minutes.

This rice goes great with quesadillas, enchiladas, or other Mexican dishes.
