Dried Beef Chowder |
Ingredients: 1/2 cup chopped onion 2 tablespoons margarine 3 medium potatoes, peeled & diced 1 jar (8 ounces) dried beef, snipped 1 cup water 1 can (14.75 ounces) cream style corn 1 cup milk 1/2 teaspoon salt 1/8 teaspoon crushed black pepper Directions: In a small skillet, saute onion in margarine until tender but not brown. Add potatoes, beef and 1 cup water. Cook and simmer for about 15 minutes or until potatoes are tender. Stir in corn and milk. Add salt and pepper. Return to boiling. Cook on a lower heat for another 20-30 minutes. Yields 4 servings. |
