Dilly Egg Salad for Sandwiches

Ingredients:

6 hard-boiled eggs, chopped

1/2 cup small-curd cottage cheese

2 celery ribs, chopped

4 tablespoons dill pickle relish

6 tablespoons mayonnaise

2 teaspoons Dijon mustard

8 slices multi-grain bread

4 lettuce leaves

4-8 tomato slices

salt & pepper to taste

Directions:

In a bowl, combine the eggs, cottage cheese, celery, relish, mayonnaise, mustard, salt and pepper. Spread egg salad on four slices of bread and top with lettuce and tomato. Add top slice of bread. Yield: 4 servings
