Deviled Eggs - Chicken Creole Style

Ingredients:

6 eggs

1/2 cup diced cooked chicken

5 tablespoons mayonnaise

1 tablespoon finely chopped onion

1 teaspoon honey mustard

1/2 teaspoon ground mustard

1/2 teaspoon Creole seasoning

1/8 teaspoon hot pepper sauce

1 tablespoon minced fresh parsley

Directions:

Place the eggs in a large saucepan and add enough cold water to cover them about 3 or 4 inches above the eggs. Bring the water to a boil and immediately remove from heat. Cover and let the eggs stand in the hot water for 10 to 12 minutes.  Rinse in cold water and place eggs in ice water until completely cooled.

Cut boiled eggs in half lengthwise. Remove yolks; set whites aside. In a small bowl, mash the yolks. Stir in the chicken, mayonnaise, onion, honey mustard, ground mustard, Creole seasoning, and hot pepper sauce. Spoon into egg whites. Sprinkle with parsley. Refrigerate until serving.
