Deviled Eggs - Cajun Style

Ingredients:

6 eggs

2 tablespoons mayonnaise

1 teaspoon prepared Dijon-style mustard

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground cayenne pepper

Directions:

Place the eggs in a large saucepan and add enough cold water to cover them about 3 or 4 inches above the eggs. Bring the water to a boil and immediately remove from heat. Cover and let the eggs stand in the hot water for 10 to 12 minutes.  Rinse in cold water and place eggs in ice water until completely cooled.

Slice the eggs in half lengthwise. Remove the yolks and place them in a medium bowl. Set aside the egg whites (to be used later). Mash the yolks with a fork and mix in the mayonnaise, mustard, salt, and pepper.

Fill in the hollowed egg white halves with the yolk mixture. Sprinkle with cayenne pepper, adjusting the amount to your taste.

Cover and chill in the refrigerator until ready to serve.
