Cranberry Salad

Ingredients:

1 package (12 ounces) fresh cranberries, washed & sorted

1 1/2 cups granulated sugar

3 packages (3 ounces each) orange gelatin

3 cups boiling water

2 cans (11 ounces each) mandarin oranges

1 cup chopped pecans

1 can (8 ounces) crushed pineapple

Directions:

Grind cranberries in a food grinder, processor or blender. Stir in sugar to blend and set aside.

In a medium bowl, dissolve gelatin in boiling water, cooling until mixture thickens. Add cranberry mixture, followed by oranges, nuts and pineapple. Stir well and pour into lightly oiled 8-cup mold. Chill overnight. Turn mold upright on serving platter; garnish with decorations or fruits of your choice.
